The best way to spread holiday cheer is by giving people what they want!
We are all busy people and most of us are spinning too many plates and finding it hard to juggle all the demands on our time, yet still, we want to serve up a delicious and decadent cuisine & accompanying refreshments that will make our Christmas Season even more special.
Whether you have a penchant for drinking a glass of Mulled Wine during the cold winter nights or enjoy sipping on a cool Bucks Fizz on Christmas Day morning, the food and drink we serve up are so important!
I have popped a few of my favourite food ideas below, maybe you need a change and this can help make this year’s Christmas menu just slightly easier!
Homemade pates and terrines look difficult, but they only require a little effort and are so simple to make. This tasty Pork, apricot and pistachio terrine can be made in advance of the big day and will keep in the fridge for up to 3 days:
Add this impressive starter to your Christmas menu and turn a family meal or dinner for friends into an exceptional occasion. Serve with crisp green pickles, crusty bread or flatbread, it also tastes great with a fruity chutney!
Or, start dinner off with a warm, cosy bowl of soup. From a traditional Stilton & broccoli to a light and silky cauliflower soup, there’s something for everyone here…and they’ll all keep you warm and toasty, whether it’s a white Christmas or not.
My current favourite is this delicious Moroccan Roasted Vegetable soup, it has such a fabulous warm flavour.
If however, you do not happen to have any Ras el Hanout in your store cupboard, this can be substituted with ground coriander and the taste is still fantastic.
We all have our traditions when it comes to the main course of the Christmas dinner, so I am not going to make any suggestions here, but no doubt yours will include a few, if not all of these: turkey with stuffing, roast potatoes, pigs in blankets, Yorkshire puddings, carrots, turnip, parsnips, sprouts, peas, broccoli, gravy and a good dash of cranberry sauce. Are you salivating yet?
Once you have filled your belly, with the main, there is always that little pudding pocket, that little space for some fabulous dessert!
Times are changing and have you considered an alternative to the Christmas pudding? A Christmas pudding infiltrated with a little bit of Gingerbread Man?! Try a Ginger Parkin! It is a traditional wonderful, warm, rich tasting Ginger cake with Oats and a slightly sticky and chewy texture and is quite delicious; Sticky Ginger Parkin
Wash it all down with some amazing rich Port and a cheese board and you will be in 7th heaven!
After the excesses of Christmas Day, Boxing Day is a day to sit back and enjoy the time spent with loved ones, for the children to play with the toys that Father Christmas bought them and not a day for slaving over the stove.
Have you invested in a slow cooker? We bought one years ago (this one in fact: Morphy Richards Slow Cooker 3.5 Litre 48709 Brushed Steel Slowcooker) and it has transformed the way we cook in our house, not just during the Autumn/Winter months, but year round. Anyway, we have had a Boxing Day dinner tradition building for a few years now and it is a great one which can be made well in advance and frozen, enhancing the taste & flavours further! This dish is a firm favourite of ours and can be spiced up or calmed down according to your own specific tastes. Serve with rice, tortilla chips, cheese, sour cream and a little bit of coleslaw on the side and you are on to a winner!
